La Vita e Bella Photography has officially moved! We have relocated from the Seattle area to a small, beautiful town near Salem, Oregon. My husband’s job has taken us out of state, but we are excited to see what the future holds. Our new hometown is surrounded by beautiful farmland, lush vineyards and an amazing view of Mt. Hood. So many beautiful photography backdrops and places to explore! I am open for booking, and look forward to meeting new clients. How can it be nearing the end of September already?! This summer has been crazy. Spring was crazy. Last winter was crazy. I’m starting to see a pattern…
Life goes by so fast. In the blink of an eye! Sometimes you just need to sit down, take a break and write a bit…and have a cookie.
Those of you who know me, know I’ve become quite the whole-foodie over the past few years. Initially it was due to health, but now it has just become a way of life. To be honest, I don’t even feel bad about having a cookie before 9:00 a.m., because you know, at least its made out of organic, whole food ingredients (and life is too short to obsess too much over calories!) ;) Time flies, so you might as well have a cookie along with your organic, homemade pumpkin spice latte. Especially if its of the delicious, whole ingredient Peanut Butter Cookie variety from Lisa Leake’s fantastic new cookbook, 100 Days of Real Food.
Recently I had the opportunity to review Lisa’s cookbook, and the absolute first recipe I tried was the PB cookies. Can you blame me, it calls for 3/4 a cup of REAL peanut butter. And real maple syrup. Did I mention the maple syrup? What’s NOT to love?!?!?!
My little sidekick Bridgette, the youngest (to date) of my crazy brood, helped me with the baking madness (yes, this is us in the reflection of my worn out, trusty Kitchen Aid):
These cookies were simple to whip up. They took almost no time at all, and oh my goodness, so delicious. You might think I’m just saying that (because hello, its a cookie), but really – these are GOOD! I’m a little infamous around my house for never following a recipe. I alter and change up pretty much everything I make, but I only made two slight alterations with these: ground flax instead of eggs (due to an egg allergy) and chocolate chips instead of peanuts. I couldn’t help myself. PEANUT BUTTER. CHOCOLATE. Yes.
Now I’m not going to give away the entire recipe, because I think the cookbook is so great that it deserves to be purchased (no, I do not receive compensation for sales, I just really like this cookbook).
